I have two subpanels I would like to monitor with one meter. These subpanels are fed by different transformers in the building. Can I parallel current sensors and monitor both panels with one meter?

When monitoring multiple loads with one meter, all the loads must be of the same voltage and power source. Because the panels are fed from different transformers you cannot monitor them with one meter. You will need two individual meters for this application.
